I'm a big King fan and have read many of his books (but only a small fraction of his total collection) and am currently re-reading The Stand.

My favourites so far have to be Dreamcatcher (beware the film it is crap) and Insomnia (there is a film of the same name but has nothing to do wth it).

When it comes to his films all i can say is read the book first or at least aswell (answers a lot of questions and heals the wounds that the crap adaptions cause). This is especially true for The Shining, although Kubrick made a good film he changed the story so much that King has disowned the film and another adaption has been made. Ever since this King has always insisted on script approval and an amount of artistic control.

Although quite a number of the film adaptions are very good, I have only come across two which in my opinion are better than the books: The Green Mile and Room 1408 (its based on a short story of about 20 pages, so bound the be more in depth). Carrie comes very close if only they had included abit more backstory and casted Carrie better (she suposesd to be a fat girl not a bug eyed anorexic).

I remember watching "It" as a kid and thinking what a pile of crap (so crap that i had absolutely no desire to read the book) but have recently read the wiki page about the novel and will probably give it a try.
