So.....birthday party at Trulucks today with my fav stone crab claws and poblano pepper soup. Sucked. No flavor in anything. Good fun we had but my fav meal wasnt worth the big bucks. |

There is no way I could say what is the absolute best food I've had. We have some great places here in South Louisiana. However, if I had one meal before dying I'd pick my dads white beans and rice with some fried specaled trout. Of course dhk can't pick a favorite, the fat ass eats everything in sight. ;-) |

I ate at a pretty badass food truck recently that served a fried chicken poutine. It was a normal poutine with boneless fried chicken on top, a buttermilk ranch sauce and some unnamed cajun spices. Might've been all the booze talking, but it was pretty heavenly. |

Dude, is Pootine all you eat? Boneless chicken simply means ancient frozen breasts. I will bet you the Cajun spices were Tony Chacheres since that's all most of the world knows. I love Cajun food, hopefully there is better than than poot poot. Now....you need to talk to them and see if they will do a Boudin (Cajun sausage with rice in it) poutine. Poutine is indeed all I eat, yes. But the fried chicken was actually really good. I eat a lot of chicken too, so if it was the frozen shit I wouldn't have liked it at all. Boudin poutine is actually a pretty good idea, I'm surprised I've never come across it before. I've seen andouille poutine before, but I'm not a big andouille fan so I passed on it. |

I don't care for Andouille sausage either, just something funky in the spice mix that I don't care for. Boudin is very mild so you would want to spice it up some with whatever Cajun spice mix. You can make your own "Cajun" spice blend and customize to your tastes, its very easy. Here is a good mix to play with salt (good salt, like kosher, sea) black pepper cayenne pepper (give it the bang plus the red color) garlic powder (not garlic salt as you are already using salt) onion powder celery powder or celery seed (gives it that herby boost that puts it over the top) That's a good all purpose seasoning. You can add or play with it. |

spices and dried herbs lose their taste over time so if that old bottle of steak seasoning it a year or 10 old, it has lost all its oomph. Trash it. Spices last longer in the fridge. |

No!!!!! That would be terrible :). Different potencies. Plus you may Add more of some if you really like it such as more garlic. You can even leave salt out so as to control it more since most commercial seasonings are 90% salt. Before you make a big batch and dont like it, try this small mix. Teasoon black pepper (fresh cracked best) Teaspoon garlic powder Teaspoon onion powder 1/2 teaspoon cayenne pepper 1/4 teaspoon paprika ( for red color and mild bite) 1/2 teaspoon celery powder or celery seeds Thats a good starter seasoning and you can adjust as you prefer. If you add salt then do 2 tablesoons or less -to taste. You can customize as you like. Add a bit of smoked salt for a different flavor. Then you add herbs as you like. Every spice mix starts with salt, pepper, garlic and onion. |
