BBQ brisket. True, Texas-German old-school slow smoked brisket bbq. The legendary Louie Mueller outside Austin, TX. Its a 3rd generation now and I was fortunate enough to eat there under the 2nd and 3rd generation of the Mueller family pit masters. The briskets are smoked forever, 12-18 hours until the collegen in the meat breaks down making tough brisket melt in your mouth. Louie Mueller is a historical stop where the dining room is an old gym. The family is highly respected and full of drama. Outlaw son, John Mueller split from the family after fighting with his dad and has opened and closed 2 or 3 of the most highly regarded bbq joints in the area. Franklin, the current celeb de jour in Austin, apprenticed under John and bought his pit when John got tired of the grind and said fuck it. John is back with John Mueller Meat company. Franklin is the golden boy in Austin. And Louie Mueller continues to be legendary a hour outside Austin. Beef ribs, pork ribs, tri tip, or brisket, its the best in the world. |

Escargot. lets face it, they are all from a can so what makes any of them delicious while others are rubbery? Old San Franciso Steakhouse is my fav escargot appetizer. its not just canned snails in melted butter, they do a cream sauce with good dose of parmesan cheese toasted on top. Truly excellent, I could eat a pound of these little critters. |

Stone Crab Claws. Trulucks in the Galleria rich section of Houston is outstanding. They have their own lease off of Florida and own boats flying in the fresh claws daily. The mustard mayo dipping sauce is straight out of the Florida Keys and the quality is excellent. And oddly enough, Trulucks also has the best Poblano pepper cream soup Ive ever had. 5 stars, its fantastic. A bowl of soup and a couple dozen stone crab claws is a fantastic meal. |

raw oysters. Best I ever had was at a true oyster bar on the warf in Seattle. The tiny Japanese oysters were ethereal and everything was ultra fresh. An illuminating experience on enjoying these wonderful creatures. No cocktail sauce, no crackers. Just slurping oysters and their liquor. |

Braised bison tongue, followed by duck in a can, and finished with creme caramel, at Au Pied de Cochon. Best meal of my life. |

No idea what duck in a can is. I assume its a cooking technique and not canned duck. |

It actually is, lol. It is a duck breast, with a mound of fois gras, and seasonings, stuffed into a can to blend/age or whatever. Here is how it is served |
