EGG ROLLS 3 cups Ground Pork or Beef, (or half & half) 1 cup Green Onions 2 cups Celery (finely chopped) 1 cup Carrots (finely chopped) 1 cup Shredded chop suey greens or cabbage 1 cup Water Chestnuts (minced) 1 lb. Bean Sprouts Fry all the above ingredients in a pan on low heat for 20 to 30 minutes. In a bowl mix together: 1 Egg 1 tsp. Accent 1 TBSP Soy sauce 1 tsp Salt 2 tsp Sugar 1/4 cup Crisco oil Pour this mixture over the fried meat mixture, stir all together. Then place the entire mixture into a strainer, or else it will be too wet. Place 1-2 TBSP. of filling at edge of each egg roll wrapper,wonton wrapper or philo, fold ends in over filling and roll up at the filling side, seal roll by moistening edge with a bit of water. Deep fry until golden, turning frequently. Makes about 3 dozen in egg roll wrappers. Serve with plum sauce. To freeze, lay on cookie sheet. When they are beginning to get firm, place them into freezer bags. To reheat: Thaw and place in a preheated 350 degree oven, about 10-15 minutes or until heated through... WATCH CLOSELY...so they don't burn! |
