Sweet Potato Pudding 2 cups mashed sweet potato, (1-1 lb 7 oz. can) 1/2 cup butter, melted 1 cup sugar 2 eggs 1/4 tsp. nutmeg 1/4 tsp. cinnamon 1/8 tsp. cloves 1 cup evaporated milk 1/2 cup shredded coconut, cut fine Blend sweet potato, butter, and sugar. Add eggs, singly, beating after each. Add spices and milk. Mix thoroughly. Bake in buttered pan in moderate oven 375 degrees for 35 minutes. Remove from oven. Sprinkle top with coconut. Return to oven. Bake 10 minutes longer. Use 9-inch square baking pan. Serve warm or cold. Serves 6. I always asked my mom to make this for the holidays. |
