CHEESE TORTELLINI IN CURRY CREAM Posted By: cheft3 1 Onion (finely chopped) 1 Fresh Jalapeno (seeded, finely chopped) 1 Garlic Clove (minced) 2 tsp Curry Paste 1 TBSP Vegetable Oil 2 cups Chicken Broth 1 can Coconut Milk (14 oz.) 500g Package Cheese Tortellini (1/2 of 1 kg. package) 1 tsp Dried Basil 1 Medium Tomato (chopped) 1/3 cup Chopped Dry Roasted Peanuts In a medium saucepan, cook onion, jalapeno, garlic and vegetable oil for about 1 minute or until tender. Stir in chicken broth. Bring to a boil; reduce heat. Simmer covered for 5 minutes. Add coconut milk; curry paste, tortellini and basil. Cook and stir for about 5 minutes or until pasta is tender but still firm. Stir in the tomato. Cook and stir until heated through, but do not boil. Garnish each serving with peanuts.
