Chinese Chicken Salad and Dressing 1 head Iceberg lettuce, shredded 1-1/2 to 2 cups cooked chicken, cut up 6 green onions, chopped 1-2 inch length 1/2 cup plain peanuts 1/3 cup slivered almonds 3 to 4 Tbsp. sesame seeds Golden Dragon wonton skins sliced into 1/2 inch wide strips 1/3 cup corn oil 3 to 4 Tbsp. sesame oil Dressing: 1/4 cup brown sugar 1/4 cup Japanese rice vinegar 1/4 cup salad oil 1 tsp. sesame seed oil May use 1/3 to 1/2 extra. Mix ingredients together and pour over salad at end with wonton strips on top. Chop lettuce, green onions, chicken, and wonton skins ahead. In frying pan pour in corn oil and sesame oil, fry wonton skins, place on paper towel to soak up oil. When done place peanuts, almonds and sesame seeds in pan, barely brown and remove. Stack salad as follows: Lettuce, chicken, green onions, nuts, dressing, wonton strips. Serve immediately. Serves 4+. Note: If taken to eat later, remember not to put the dressing and wontons on until ready to eat. |
