I got this off the internet but I am sorry, I do not remember where. This was good but different. It threw me off a little due to the potatoes being grated instead of mashed, like pierogies. I would try it again. Pierogie Pizza Pizza Crust 3 medium potatoes, grated 1/2 onion, diced 2 cloves garlic, minced olive oil or red pepper infused macadamia nut oil 1/4 tsp. cayenne pepper 1 tsp. salt 1/2 tsp. ground black pepper 1 cup light sour cream 1/2 lb cooked bacon, chopped grated marble cheese 3 green onions, chopped In a non stick frying pan or wok, sauté potatoes, onion, and garlic, and spices on medium-high heat in oil until potatoes begin to brown and crisp. Roll out pizza crust and place on pre-heated pizza stone. Roll over the edges for a thicker crust on the edge if desired and brush with olive oil. Use sour cream as pizza sauce and spread over pizza crust. Spread potato & onion mixture, and bacon bits evenly over pizza and top with grated cheese and green onion. Bake in oven at 425F for 20 to 25 minutes or until edge of crust turns golden brown. Serve with extra sour cream on the side. NOTES If you don't have red pepper infused oil, just use olive oil and increase the amount of cayenne pepper for extra spice
