I made this last night and it was a definitely a keeper!!! The original recipe calls has the recipe for homemade meatballs too, but I just used frozen as I was lazy yesterday, so I will just post it the way I made it. Meatball Sub Casserole 1 package frozen meatballs, cooked 1 lb loaf Italian bread cut into inch slices 1 package cream cheese and chive softened 1/2 cup mayonnaise (not lowfat or fat free) 1 teaspoon Italian seasoning 2 cups shredded mozzarella cheese 1 jar of spaghetti sauce 1 cup of water 2 cloves garlic minced Oregano to taste Place bread in 9 x 13 inch casserole. Mix cream cheese, mayo, and seasoning. Spread mixture on bread slices. Top with 1/2 cup mozzarella cheese. Layer with meatballs. Mix spaghetti sauce, water and garlic. Pour over meatballs. Top with remaining cheese and sprinkle with oregano. Bake in 350 degree preheated oven for 30 min. I served this with green salad. Green mixture 8 cups field greens 3 green onions chopped 2 hard boiled eggs chopped 6 strips bacon cooked crisp and crumbled For dressing 1/3 cup bacon grease 1/2 cup sugar 1/2 cup white vinegar 1 teaspoon garlic powder 1 teaspoon seasoned salt 1/4 teaspoon mustard powder Bring all to boil. Pour over green mixture. Toss. Serve immediately. |
