Here is the original recipe, but you know me, I always change things around. I used real mashed potatoes instead of instant and added garlic, sour cream, shredded muenster & cheddar cheese. Instead of V8 juice, I mixed together a sweet n sour topping of ketchup, yellow mustard, brown sugar and a tsp of Chef Paul Prudhomme's magic barbeque seasoning to spread on the top. It was pretty good! Mashed Potato Meatloaf 1/1/3 cups water 1/3 cup milk 2 Tbsp. butter 1- 1/2 tsp salt, divided 1-1/3 cups instant potato flakes 1 egg, beaten 1/2 cup quick-cooking oats 1/2 cup chopped green pepper 1/3 cup chopped onion 3/4 tsp pepper 1 pound lean ground beef 1 can {11 1/2 ozs} V8 picante juice 1/4 cup ketchup Prepare instant potatoes by bringing milk, butter, water & salt to a boil. Remove from heat, add potato flakes. let stand for 30 seconds. Fluff with fork, set aside. Prepare meatloaf mixture by combining egg, oats, green pepper, onion, and remaining salt. Crumble beef over mixture and mix well. On a piece of wax paper, pat beef into a 12-in x 8-in rectangle. Spoon mashed potatoes down center of meat and within 1-inch of edges. Bring long sides over potatoes to meet in center, seal seam and edges. Place seam-side up in greased 13x9x2-in baking dish. bake uncovered at 350 for 30 minutes, drain. Pour V8 juice over loaf. Top with ketchup. Bake 18-22 minutes longer. Let stand for 5 minutes before slicing.
