I've made this twice now, first time with ham, second time with lightly cooked pancetta. Either way you make it, it comes out fantastic! This recipe alone is worth the price of an electronic pressure cooker! Don't be put off by the dry tortellini, after using it here I won't buy any other kind. PRESSURE COOKER CHEESE TORTELLINI ALFREDO WITH HAM From Slow Food Fast by Bob Warden, QVC Serves 4-6 (changes for serving 2-3 in *parentheses) TORTELLINI: 1 bag (13 oz.) dry cheese tortellini (sold in pasta aisle, Barilla) (*8 oz. bag) 1-1/2 cups cubed or diced ham (*4 oz. ham OR diced, heated pancetta) 2-1/2 cups water (*2 cups water) 3 Tbsp. butter or margarine (*2 Tbsp. butter or margarine) ½ tsp. garlic powder (*same) ¼ ground black pepper (*same) 1/8 tsp. ground nutmeg (*same) DAIRY: ¾ cup grated Parmesan cheese (*same) ¾ whole milk (*1/2 cup) 4 oz. cream cheese (*same) Salt to taste Add all tortellini ingredients to pressure cooker, securely lock on lid, set the cooker to high and cook for 4 minutes. Perform a quick release to release the cooker’s pressure. Safely remove lid and slowly stir in the dairy ingredients until melted and creamy. Salt to taste and serve immediately. Charlene’s Notes: This recipe is amazing! Cook’s Illustrated recently rated cheese tortellini and Barilla dry 3 cheese tortellini came out on top of all the other brands. I made this the first time with ham and it was very good. This time I used diced, cooked pancetta and it was fantastic. I did modify some of the amounts of ingredients for the smaller batch and didn’t change others. What I did get was a fantastic, cheesy, creamy and wonderful result. I use an electronic pressure cooker and I used the smaller (about 5-6 quart) of the 2 that I have. |
