zabriel Posted: 01.14.07 Savory Winter Soup 2 lbs ground beef 3 medium onions, chopped 1 garlic clove, minced 3 cans (10 1/2 oz each) condensed beef broth, undiluted 1 can (28 oz) diced tomatoes, undrained 3 cups water 1 cup EACH diced carrots and celery 1 cup fresh or frozen cut green beans 1 cup cubed peeled potatoes 2 Tbsp minced fresh parsley or 2 tsp dried parsley flakes 1 tsp dried basil 1/2 tsp dried thyme Salt and pepper to taste In a skillet, cook beef, onions and garlic over medium heat until the meat is no longer pink; drain. Transfer to a 5-qt. slow cooker. Add the remaining ingredients and mix well. Cover and cook on high for 8 hours or until heated through. Z's notes: I used 2 onions and used 2 cloves of garlic I had 3 cans (14.5 oz) of ready to serve beef broth, so I used those and 1 cup of water instead of 3 cups. The tomatoes I used had basil, garlic and oregano; I added the basil as well. I served the soup with freshly grated Parmesan cheese. |
