ISLANDER DRUMSTICKS – crock pot recipe Ingredients 3/4 cup apricot-pineapple jam 2 tablespoons soy sauce ( I used Lea & Perrin's instead ) 1 teaspoon ground ginger 1 teaspoon lemon zest, grated 3 pounds chicken drumsticks ( I skinned mine ) 3/4 cup pineapple wedges, canned, drained Directions In a small mixing bowl, combine the jam, soy sauce, ginger and lemon zest. Dip each drumstick into this mixture and place into the Crock-Pot® slow cooker. Pour the remaining jam mixture over the drumsticks. Add the pineapple chunks and mix thoroughly. Cover; cook on Low 4 to 6 hours (or on High for 2 to 3 hours). Remove the drumsticks and pineapple from the stoneware and place on a broiling tray. Broil for 10 minutes or until the chicken has browned ( I didn't do this ) |
