Broccoli Soup 2-3 lb. fresh broccoli 1 T. maargarine 2 c. fat-free milk 1/2 c. light cheese (such as Velveeta light) cut into sm. cubes. Chop broccoli. Remove any tough stalks & discard. Place broccoli, margarine & water to cover in slow cooker. Cover. Cook on high 1 to 2 hrs. Add milk. Cook 15 minutes longer. Stir in cheese & continue cooking until cheese is melted into soup. |
