Pork Sandwiches


1 boneless pork shoulder roast (2 1/2 to 3 lb)
2 t. fajita seasoning
2 cans ( 10 oz. each) enchilada sauce
1-2 jalapeno peppers, seeded (if desired) and finely chopped
8 kaiser rolls, split & toasted

Trim fat from pork. If necessary, cut roast to fit into slow cooker. Place meat in cooker.

Sprinkle pork with fajita seasoning.
Add enchilada sauce & peppers.

Cover. Cook on low 11 to 12 hrs.

Transfer meat to cutting board. Using 2 forks, gently shred meat.

Stir shredded meat into sauce mixture in slow cooker. Using a slotter spoon, spoon shredded meat mixture into toasted rolls.
