Green Bean Soup 5 cups chicken stock 4 cups fresh or frozen green beans, cut in short pieces 1/4 cup finely chopped onion 2 tablespoons diced celery 2 medium carrots, diced or sliced 1 teaspoon salt 1/4 teaspoon pepper 1 cup sliced pepperoni, smokies or other processed sausage Cheddar cheese for garnish Combine all ingredients except cheese in large pot. Bring to a boil and simmer, covered, for about 20 minutes. Serve with grated Cheddar cheese as a garnish in the center of each bowl. Makes about 6 cups |
