Saw this in our local paper today.Sounds really yummy!


Ham Salad
2 cups finely diced ham
3 hard-boiled eggs, chopped
1/4 cup sweet pickle relish
1/4 cup mayonaise
2 Tbsp. minced onion
2 Tblsp. minced celery
2 Tbsp. minced red bell pepper
1 Tbsp.chopped fresh parsley
2 tsp. Dijon mustard
Pinch of cayenne pepper, (optional)
1 Tbsp. lemon juice
Salt & Pepper to taste

Directions
Mix together all ingredients in large bowl.
Serve chilled on crackers, in sandwiches, or mixed with cooked macaroni as a main dish.
Makes enough for 3-4 sandwiches.
