A cool summer meal

Turkey-Brie Sandwiches w/spicy Peach Chutney

Chutney
1/3 cup peach preserves
1/2 chopped peeled fresh peaches
2 tsps. finely chopped green onion
1/2 tsp. balsamic vinegar
1/4 tsp crushed red pepper flakes


Sandwiches

1/4 mayonaise
4 crusty French rolls, or baguettes, split
4 leaves green leaf lettuce
8 oz. Brie cheese, cut into 1/4-inch slices
8 oz. sliced turkey breast from deli

In a small bowl, combine chutney ingredients, stir.
Spread mayo evenly on bottom half of rolls. Top each with lettuce, cheese, turkey and 2 Tbsps. chutney. Cover with top half of rolls.

4 sandwiches
