My Italian MIL used to make these all the time.........may have already shared..........but so yummy. Green or whatever colored peppers you have...........I do lots. Cut up and remove seeds/membranes. Cut the peppers not too small.........like in 1 1/2" chunks and fry them up in olive oil....till they get tender, not too soft........YOUR HOUSE will smell so good!!!!!! Good comfort food!!!!!! THEN, when peppers are kind of soft, a little brown, toss in some scrambled eggs or egg whites and continue to cook till eggs are done and throw in some grated parm cheese.............YUM. They are so good COLD!!!!!! Just need some good crusty rolls to put them on. Better the next day IMHO. |
