We eat quite a bit of fish around here, and I'm always looking for new ways to cook it. I saw this recipe in a magazine at the doctor's office this morning and had the receptionist copy it for me. Went to Trader Joe's on my way home and got what I needed to fix it. It was delicious! Pecan-Crusted Roasted Salmon INGREDIENTS: 4 salmon filets (4-6 oz ea.) salt and pepper to taste 1 Tbsp Dijon mustart 1 Tbsp honey 2 Tbsp fine bread crumbs (seasoned or plain) 2 Tbsp chopped pecans 1 tsp fresh or dried parsley fresh lemon wedges DIRECTIONS: 1. Preheat oven to 400 degrees F. 2. Lightly sprinkle salmon with salt and pepper, and place salmon skin side down on baking sheet coated with cooking spray. (I used a glass baking dish) 3. Combine mustard and honey, and brush on top of salmon. 4. Mix topping of bread crumbs, nuts, and parsley, and sprinkle over salmon, pressing into honey mustard mixture, 5. Bake 10 to 15 minutes or until flaky. 6. Serve with fresh lemon wedges. Serves 4 |

I love nuts and I adore salmon...but together, I just don't know. Say its really good? I'll take your word for it Bette, and try it out real soon! |

Pecan crusted fish is really excellent. The nuts just add a nice flavor layer to the whole dish. I've never had them on salmon, mostly because I really don't care for salmon, but I've had it on steelhead, rainbow trout, tilapia, etc. Give it a try! If you really hate it you can always scrape off the nuts. |

There use to be a Prime Sirloin restaurant in a nearby town that had a Hawaiin chicken entree. It was really good and was a grilled, boneless chicken breast that had a citrus glaze w/cinnamon and covered in walnuts. I loved it, but that was chicken. Going to have to try this salmon and just see for myself. |

It REALLY is excellent, Lisa. I wouldn't post it and say so if it wasn't. Everyone here loved it, except for JQ, but he doesn't like any kind of fish. lol
