This is sooooo good!!!!!! My parents' dear friends shared this with us and they live on Marco Island......hence the name. A very refreshing salad. Marco Island Shrimp and Chicken Salad 2 c. cooked, drained, cooled pasta - I use bowties 3 c cooked chicken, cut up 2 c cooked shrimp, can add more 1 (8oz) can peaches, chopped and drained 1 (8oz) can pineapple chunks, drained 1 c chopped celery 1/4-1/2c chopped onion...personal pref 1 can EAGLE BRAND sweetened condensed milk 1/2 c lemon juice 2 T salad oil..not olive 2 T prepared mustard salt to taste Mix all together and refrigerate overnight to allow flavors to combine. I usually make a double recipe of dressing and save half to add the next day to moisten before serving. This is VERY GOOD!!!! |
