My Italian MIL used to make these all the time in the spring!!!!!!!!!!! Mmmmmmm They were so good!!!!!! I just buy a bunch of green peppers and wash them, cube them into 1" cubes, take out the seeds and membranes......heat up some olive oil, throw the peppers in and stir till lightly browned and tender. I use egg whites now, but she used whole eggs, and freshly grated parmesan cheese..........Mmmmmmmmmmmmmm. Love them cold on good crusty bread!!!!!!!! OMG........they are the best!!!!!!! All you need is a green salad to go with OR a cup of soup!!!!!!!! GREEN DINNER!!!!!! House will smell so GOOD!!!!!!!! |
