I made this last night and it was really good!! I got the idea from Rachel Ray, but kinda changed it a bit. She made sandwiches with this. I sliced the chicken real thin and served over buttered bowtie pasta with diced tomatoes and lots of fresh parmesan and cracked pepper. Juice of 2 lemons Palm full of Fresh Chopped Italian Parsley 4 Cloves of garlic, crushed 1 tsp of sugar or drizzle of honey Salt and Pepper 1/4 C Extra Virgin Olive Oil - add last and whisk as you add 4 boneless, skinless chicken breasts Mix first 6 ingredients and let chicken marinate for about 30 minutes or so. Shake off excess marinade and either grill or pan fry. I used the pan and fried cooked for about 6 minutes per side. Made a great "crust" - as it carmelized. Served it on a bed of pasta. DELICIOUS!! |

Was it sour tasting Lauren? I remember my sister made lemon chicken cutlets one time while we were visiting her and hated to hurt her feelings, but it was so dang sour, we couldn't hardly eat it! I noticed your recipe at least had some sugar or honey in it, so that helps. |

Nope. Not sour at all. The fresh parsley, garlic, lemon and honey mingled quite nicely. The coolest part of the recipe is how the chicken browned and then kind of carmelized. I did forget to mention - shake off the excess marinade before putting in the pan. Otherwise, you won't get that wonderful carmelization. |
