Tomato Tuscan Green Beans 1lb fresh green beans 4-6 plum tomatoes (4 large or 6 small) 1/2 cup olive oil 1-2 tsp Tuscan Sunset by Penzeys (or your favorite Italian seasoning) Fill a pot large enough to hold all the beans 2/3 full with water, bring to a boil over medium-high heat. While the water is coming to a boil, wash the beans and chop the stem ends off. When the water is boiling, add the tomatoes, cook for 30 seconds, and remove with tongs to a bowl of cold water. This will make the tomatoes easy to peel. Add the beans to the boiling water and cook for 7-10 minutes. Ten minutes are needed for really big beans, 7 for smaller beans. While the beans are cooking, peel, core and finely mince the tomatoes. Place the olive oil in a medium to large skillet over low heat. Add the tomato bits and Tuscan Sunset (or Italian seasoning). Simmer for 15 minutes. Drain and briefly rinse the beans and place in a serving bowl. Pour the tomto mix over the beans and toss to coat. the beans can be served right away, but they are even tastier if left to marinate with the tomato mix for 10 minutes. Just cover and toss to mix every few minutes.
