basically with PHP you can send e-mails. a very simple way to do that once you send that initial e-mail from the form to where ever redirect it to the next e-mail that has to be sent. keep the their e-mail they input and just use the subject and body/post saying thank you. thats about all you have to do. since when you are sending an e-mail in php, you use the header location part to go back to another page or whatever you want. you can set it to redirect you to send another e-mail. than on that page you use the header location to redirect you back to the homepage or something. it will still be quick and easy for your site and you can set it up to only work with certain forms
