So what's the story with those Stealth cars that you get when buying the Collector's Edition? Is there any way we can get them or anything?

The stealth cars as in the premium specials? If so, I think the only way you'll get them is by codes that haven't been used or maybe transfer in-game with someone. You could get certain ones by pre-ordering from different stores, but 1 store did them all IIRC.

So I guess the answer to your question is, as far as GT's concerned, no xD
Although the Camaro was still half decent back then.

Oh, I love the old Mirages , used to have one in GT4, but I also won the whole FR series in a Volvo 245 Turbo :P ,and Won a endurance race on Nurburgring in a Chevelle. (took me a while yes...)

Also, the guys in the Premium section of the GTP forum went out in convoy to get a Fiat 500 to 200mph.

It was ambitious, it was crazy, it was pointless. 200mph in a Fiat 500 - if you were to try this in real life, you'd need an enormous pair of balls... and to have a death wish. Because it would certainly end in you flying backwards into a tree while on fire and upside down, although that would be a pretty badass way to go.

Unfortunately nobody ended up upside down and on fire, although on numerous occasions people did end up backwards at very high speed. Thankfully GT isn't real life (NO WAI!), so there were no fatalities - well, unless you count numerous sets of tyres that were done to death.
