Cinnamon cupcakes

Ingredients:

180g butter (room temperature)
3/4cup caster sugar
1 tsp vanilla extract
2 eggs
1 1/4 cups (185g) self-raising flour
1/4 cup (40g) plain flour
2 tsp ground cinnamon
1/2 cup (125ml) milk

Preheat oven to 170C (340F).

Beat butter, sugar and vanilla extract together until pale and creamy. Add eggs one at a time, beating well after each addition.

Sift flours and cinnamon together. Fold in alternately (I find it easiest to start with the flour/cinnamon first) with milk in 2 batches. Spoon into cupcake pans.

Bake for 30mins or until skewer inserted into the centre comes out clean.

*Note: this was originally a cake mixture, so if you want to make it as a cake, once it's cooked and cooled down a bit, mix 1tablespoon of caster sugar, 1 tsp cinnamon and 1 tablespoon of butter together, pour over the top and leave it to cool for a bit before serving.
You can do that to the cupcakes as well, but for some reason it doesn't taste as nice.

They are so good. The house still smells like cinnamon.

Well, cinnamon and curry seeing as how there's a curry chicken pie in the oven at the moment.

We are having curry at my house too lol. I can't make cupcakes because I usually burn them. If there was some way I can use the microwave to bake cupcakes then woot!
