![]() Ingredients: 180g butter (room temperature) 3/4cup caster sugar 1 tsp vanilla extract 2 eggs 1 1/4 cups (185g) self-raising flour 1/4 cup (40g) plain flour 2 tsp ground cinnamon 1/2 cup (125ml) milk Preheat oven to 170C (340F). Beat butter, sugar and vanilla extract together until pale and creamy. Add eggs one at a time, beating well after each addition. Sift flours and cinnamon together. Fold in alternately (I find it easiest to start with the flour/cinnamon first) with milk in 2 batches. Spoon into cupcake pans. Bake for 30mins or until skewer inserted into the centre comes out clean. *Note: this was originally a cake mixture, so if you want to make it as a cake, once it's cooked and cooled down a bit, mix 1tablespoon of caster sugar, 1 tsp cinnamon and 1 tablespoon of butter together, pour over the top and leave it to cool for a bit before serving. You can do that to the cupcakes as well, but for some reason it doesn't taste as nice. |

They are so good. The house still smells like cinnamon. Well, cinnamon and curry seeing as how there's a curry chicken pie in the oven at the moment. |

We are having curry at my house too lol. I can't make cupcakes because I usually burn them. If there was some way I can use the microwave to bake cupcakes then woot! |
