This is how I do my pie. I follow the recipe on the back of the can, but change the following. use one additional egg, subsitute the evaporated milk with one can of half and half or whole milk. (2% or skim makes it too watery). I also use half the amount of cloves that the recipe calls for, and split the amount of ginger in half, and use an equal amount of nutmeg. a few people I know are allergic to the evaporated milk. The consistancy of this pie is more like a traditional egg custard pie. |
