4 boneless skinless breasts or chicken thighs
evoo
a bit of butter
salt and pepper
dill
thyme
parsley
1 onion chopped finely or onion powder
1 can of cream of mushroom soup
1 cup dry white wine, or chicken stock
1 cup water.
milk or half and half
water and cornstarch to thicken (if needed)

salt and pepper the chicken peices. Heat a large skillet with evoo and butter until almost smoking, place the chicken in the skillet and brown quickly on both sides. (If using real onions, saute first in evoo and remove and add back in after the chicken is browned) add water and wine or chicken stock and the spices(dill, thyme about 1/2 tsp. dried a peice, and onion powder) reduce heat and let simmer until the chicken is cooked, remove chicken and set aside. Reduce the liquid in the pan by half and add the soup, stirring until combined. Then add approx. 1 can of liquid(milk, cream, water, or stock) and stir until combined and bubbly. Cut chicken into cubes and put back into sauce, add parsley flakes, and salt and pepper to taste, let the chicken heat through.

use the cornstarch and water to thicken it if you like a heavier sauce.

I served it over white and wild rice.
