Mom’s Mexican Chicken Casserole

4-6 medium boneless, skinless chicken breasts
vegetable oil
1 medium can diced tomatoes
1 small can diced green Mexican chiles
1 medium onion, diced
1 tsp garlic powder
1 tsp cumin powder
1 tsp cilantro
1 package Velveeta Mexican flavor cheese
1 medium package shell macaroni

Cook macaroni according to package directions. Drain and set aside.

While macaroni is cooking, heat oil in a large skillet over medium to medium high heat.. Brown chicken breasts in oil, turning occasionally, until lightly browned. Remove from heat and cut into small (about 1” or less) chunks. Return to skillet.
Stir in diced onions and sautee until transparent. Add tomatoes, chiles and seasoning. Stir until blended. Reduce heat to medium low. Cut Velveeta into slices about an inch thick or so and then place in pan. Stir until cheese is thoroughly melted. Stir in cooked macaroni. Adjust seasonings to taste.
You can use the mild mexican Velveeta or regular Velveeta instead of the "HOT" to reduce the heat. The green chiles are NOT hot.

I am going to have to try this one...I think Robert will really like it. he has been missing mexican food. not tto much of it here on Staten Island, not like in Vegas, lol

LOL since I posted it I have been craving it. Maybe I will make it again and just make it less spicy. Ha and I find if I use Velveeta Cheese but hide it from him he has NO idea...although its kind of hard to sneak ingredients in a 28x8 trailer

Val btw this recipe makes ALOT! So if you use the recipe you can have lots of leftovers.

I've made it twice now, both times with the reg. velvetta, and it's not hot at all. I have to add extra spices to make it more to my liking....which is on the hot side :D
