1 lb. Maryland Blue Crabmeat 2 Tbs. butter and flour, mixed together in a paste. milk parsley and old bay(creole seasoning will work too) 1 cup mayo and 1 egg yolk Pick thru the crabmeat looking for shells, place in a burner proof ceramic dish. Pour in enough milk to just barely cover the crabmeat. Heat on the lowest setting, it should simmer, not boil. When heated through, add the butter/flour mixture and stir gently. When the milk thickens, add parsley and old bay to taste. Mix together mayo and egg yolk, and spread over the top of the crab. place under the broiler or in a very hot oven, until the top is brown. Note: if you are going to use it to stuff shrimp, lobster, or mushroom, let the crab cool, and put in the item to be stuffed, and spoon a small amount of topping over, and then bake. Also great as a dip with crackers. |
