Slayers
Hahaha, our Anime club at my college has (Or perhaps had) Karin alongside perhaps the entire Slayers series. I remember dropping by every now and then and seeing one of the members playing Slayers, and I enjoyed watching through a good portion of the episodes of Karin. Didn't see every episode of either slayers or Karin, although the club in general (Inclduing me) had some...issues with the title screen of Karin.

I'm also on the same page as you are on terms of watching anime, although I haven't bought any anime in particular. I usually have a busy schedual or I'm doing other stuff, plus I do hold issues with series that have an infinite number of episodes. The few anime that i've watched at home was borrowed from my college's anime club.

The few anime that I've watched and enjoyed are:

The Hellsing series, both the show and the OVA.

Slayers and Kerin, as mentioned before.

Full Metal Panic, and Full Metal Panic Foumoufou.

A bit of Fullmetal Alchemist

And my overall favorite, the Vandread series.

Now I'll explain a bit about Vandread since it isn't mainstream. It's a sci-fi anime with a rather balanced story, having both a fair amount of action, humor, drama, and character development. Oh, did I forget to mention it has outerspace mecha battles? Yeah, good times for me :D . Granted, I was partially attracted to the series at first because of hormones, but that aside, it was the plot and settings that grabbed me into the series.

Recommended for: People who enjoy a good sci-fi anime with mecha space battles balanced alongside with a bit of drama, humor and a sprinkle of romance.

Not recommended for: I guess anyone who doesn't like the afformentioned mecha spaces battles, but I honestly don't know.

Annoying voices: Ditta can be a tad annoying with her 'crush' on the main character, in particular in her english subbing (Recommend watching in Japenese first, although it's fairly decent in english), as well as Bart. Other than that, I can't point anything that grates on my nerves a lot.

Aside from anime, I do tend to read a lot more manga, although I only keep track of three series:

Hellsing

Fullmetal Alchemist

And my all time favorite: Battle Angel Alita (Especially including the Last Order series.

I generally read them on Manga Fox, although I started BAA by getting it at my regularly visited comic book store; and I tend to by every new BAA manga even though I've read them before online, as I enjoy reading it with actual pages in my hands. I also like to see the difference in translation, as some of the more official version tends to have better explainations.

Damn, if I had more time, I'd go over my list. Its not as extensive as I'd like it to be, but my secondary hard drive is filling up fast.

I believe in the mighty power of BitTorrent.

But, to curb your curiosity, here's a few that I liked, and I'm currently keeping up with:

The Melancholy of Suzumia Haruhi

Kanon (2007)

Karin (preferred the Manga, though the Manga had a much darker and sadder ending)

K-ON! (manga still marches forward though the anime is done, both = win)

Lucky Star

Spice and Wolf (light romance story with economics included)

Bakemonogatari (beautiful colors, strung together short stories; all relative)

Kampfer (gender bending fun, only up to Ep. 3 so far)

Fight Ippatsu! Juuden-chan!! (over-the-top fan service....)

And a few of the mainstream ones that I haven't mentioned. There are a few that I prefer the manga over the anime, and there are some that the anime is just as fun as the manga.

Yeah, about that picture you put KH, could you be careful with the size of the images. The current ones are sort of stretching the margin, and it'd be nice if you could fix it.

On that note, yeah Shin, I did see Akira a long time ago. Wacked out but good fun.

I agree with previously mentioned:

Death Note (at least for the first half)
Bleach (at least for the beginning)
Evangelion (though it's a bit too... wtf for me)
Ghost In The Shell (only seen first movie)
Princess Mononoke & Howl's Moving Castle (two of the three Miyazaki films I've seen, and the two I liked. Spirited Away was too... I don't know)
The Melancholy of Haruhi Suzumiya
Trigun

Ones I've started and am yet to finish:
Lucky Star (almost painful to watch at times)
Spice and Wolf (had trouble finding episodes)
Fullmetal Alchemist Brotherhood (never watched the original, and have fallen behind watching this one)
Last Exile (started watching it last year, lost track over the summer)



And, last but not least, ones not mentioned yet...

Buso Renkin (Kinda odd at times. Villains can be... strange. But, good story.)

Code Geass (Awesome. Seriously. Go watch it. Surprised no one has mentioned it yet.)

Cowboy Bebop (Don't be afraid of the name, it's kinda like Firefly... if done by the Japanese.)
