Smoked fish; marinade

I use this as a pre smoking brine.


2l apple juice
1/3 cup coarse salt
2/3 cup brown sugar
1/4 cup lemon juice
3tbls soya sauce
2tbls worschester
2tbls teryaki
2tbls maple syrup
2tbls garlic powder or minced garlic
onion powder or minced onion
curry powder
season salt

Marinate for 24hrs.
smoke for 3-4 hrs. depending on the heat, the lower and slower the better!

Makes enough marinate for about 10lbs of meat.
It works well for venison, pork, beef also.
