Baked Potato Soup; Recipe

This soup is great on the ice or at camp as it can be made ahead and warmed up gently when you are ready to eat it. you can also add any of your favorite baked potato toppings just place on the soup and serve

1/2 cup chopped smoked bacon
1 cup chopped leeks light gren and white parts only [make sure to rinse well]
3 cups peeled diced potatoes
1/2 teaspoon salt
1/2 teaspoon white pepper
1 cup dry white wine
3 cups chicken stock [broth]
1/2 cup 10% sour creme[sub reg if needed]
1/4 cup finely chopped chives

In a large sauce pan cook bacon until crispy
remove and reserve bacon [when cool break bacon into bits] drain all but about 1 tbl spoon of the fat from the pan
add leeks and cook until softened add potatoes,salt,pepper scraping any bits from the bottom of the pan. Add wine and cook until reduced to half. Add chicken stock, reduce heat to maintain a simmer until potatoes are soft [about 15 mins]
let cool slightly then use a blender to pur'ee until creamy and smooth. Stir in sour creme and serve with chives and bacon bits on top
