I developed this recipe by trial with the help of my boys [they ate it] I kept tweeking until I was happy with it. The result is the recipe below. You can find wild leeks in hardwoods, if you can't you can use domestic leeks and it will turn out but it is not the same taste as wild leeks.


2 Tbsp butter
3 cups sliced onion
1 cup chopped shallots
3 slices chopped bacon
1/4 tsp chili flakes
2 cups chopped wild leeks[wash well before choping]
3 tsp chopped garlic
1 cup water or white wine if you like to cook with wine
2 tsp bazil
4 cups beef stock
salt and pepper to taste
4 slices bread [your choice I like a dark rye bread]
2 tbs olive oil
1/4 to 1/2 cup old white cheese or your fav

Melt butter in a wide bottomed soup pot,med heat add bacon saute until cooked do not crisp add sliced onions,shallots,and chili flakes saute stiring occasionally until onions are golden brown about 20-25 mins add leeks and garlic saute until leeks are soft add water[or wine] scrape pan to get all browned pieces mixed in bring to a boil and simmer until onions are saucy about three mins add beef stock bring to a boil then simmer about 10-15 mins to meld flavors.While simmering take bread and brush both sides with olive oil, broil or grill until golden brown [about 1 min] when you are ready to eat soup place bread on cookie sheet top with cheese and broil until cheese is melted and bubbling[watch carefully as it burns easy] put soup in bowls top with bread and enjoy.
