www.homesteadingtoday.com great site to learn/read about all things homesteading and simple living along with some great links to the same www.legourmet.tv has some really good videos showing how to butcher and cut up meat. |

when ever I get a deer.. i just run the whole thing through the meaty grinder... we use it in ... you name it... as a ground beef replacement... lasagna, meat loaf etc etc... |

A good recipe to use your ground venison and/or hamburger. Summer Sausage 2 lbs burger 3 Tbsp Norton Tender Quick 1 cup water 1/4 tsp garlic powder 1/2 tsp liquid smoke 1/2 tsp onion powder 1/8 tsp pepper 1 tsp mustard seed aluminum foil to wrap. Mix well. Make into 3 rolls. Wrap in foil, shiny side toword meat. Refrigerate for 24 hours. Punch holes with a fork on the bottom of the rolls and place on a rack over a cake pan to catch drippings. Bake at 325 degrees for 1 and 1/2 hours. If you double the recipe use less liquid smoke. This freezes well. This is really good sandwich meat. Edited by Raven, Jun 2 2011, 07:53 AM.
