www.homesteadingtoday.com great site to learn/read about all things homesteading and simple living along with some great links to the same

www.legourmet.tv has some really good videos showing how to butcher and cut up meat.

when ever I get a deer.. i just run the whole thing through the meaty grinder... we use it in ... you name it... as a ground beef replacement... lasagna, meat loaf etc etc...

A good recipe to use your ground venison and/or hamburger.

Summer Sausage
2 lbs burger 3 Tbsp Norton Tender Quick
1 cup water 1/4 tsp garlic powder
1/2 tsp liquid smoke 1/2 tsp onion powder
1/8 tsp pepper 1 tsp mustard seed
aluminum foil to wrap.
Mix well. Make into 3 rolls. Wrap in foil, shiny side toword meat. Refrigerate for 24 hours. Punch holes with a fork on the bottom of the rolls and place on a rack over a cake pan to catch drippings. Bake at 325 degrees for 1 and 1/2 hours. If you double the recipe use less liquid smoke. This freezes well.

This is really good sandwich meat.
