Now I'm starting to learn the value of teriyaki sauce. Rice vermechelli, fresh veggies chopped through, dressed with a mix of teriyaki, sesame oil, peanut oil and chilli flakes. Not bad at all, especially considering it doesn't need any real cooking.

Wok it up with a bit of scrambled eggs, mushrooms, and use real rice instead of pasta.

I already had fried rice for breakfast. I didn't want to actually cook for lunch. Vermechelli just needs soaking in hot water.

I've improved that noodle dish further, by putting some Chinese cabbage (napa) in with the noodles, and by using the same water to blanch some snow-peas.

Now its:
Noodle Salad

Dressing:
Teriyaki Sauce
Peanut Oil
Sesame Oil
Chilli Flakes

Combine to taste. I think 1 part sauce to 2 parts peanut oil is about right for the base.

Salad:
125g Rice Vermicelli
Large handful shredded Chinese Cabbage
Large handful Bean Sprouts
Small handful Snow Peas
Small handful finely sliced Red Capsicum

Place cabbage and noodles in a large bowl and cover with boiling water. Let stand for 10 minutes.
Meanwhile, blanch snow peas using noodle water, then slice them finely, and prepare dressing.
When noodles are done, drain and rinse with cold water to cool them off, then combine with other ingredients and dressing. Serve.

Yay, I finally got hold of some soba noodles. I may make lunch with them next week, If I can be hedgehogged getting a pot on the stove.
