Sometimes I make egg noodles for the soup- a thin omelet cut into strips.

My grandma used to make these and my mom forgot all about it. This week we went to my Rebbitzen's house and she made them for our cooking class. I thought my mom was going to cry. I think we are having them this year!

We don't use potato starch on Pesach, so we asked my mother (growing up) if we could make our own. She almost had our heads. The thought of all the peeled potatoes, washing and washing the starch, was more than she was interested in. I think the amount of potatoes to potato starch is very high (5lb potatoes to 1/4 cup potato starch, iirc). And you can't stop at one cake, especially with 6 boys. It's not worth the effort.

Besides, Pesach is healthier without all the cake. For 8 days a year, we don't eat any cake or cookies. I'm fine with that. :)
If you're making cakes, I agree - you'd never get enough. But if you use the potato starch you do get from the potatoes, you can make pancakes (1 egg to 1 Tbsp potato starch + salt) and it comes out better than with the processed potato starch.

It interests me mainly because I was so unaware of all these different restrictions. The origins of these sorts of things fascinate me.
I also love hearing about different customs. A number of years ago, when I taught math, the students got off-topic into a discussion about the various customs and it was so fascinating to me to hear them all. On one end, there was a student whose father would go to a matzah bakery and bake his own matzos, they squeezed their own juice, no store-bought products, no dairy, no chicken (b/c some are grain-fed), plus they couldn't even eat her grandparents who weren't as strict, and then on the other end, there were students who eat gebrochts, veggies that don't need to be peeled, anything store-bought with a good hechsher plus a million combinations in between!

1 egg to 1 Tbsp potato starch + salt - fry by tablespoonfuls. Roll up and sprinkle on liquid sugar or whatever else you like...

So what is the basis for the no dairy? Never thought about chickens being grain fed...fascinating.

That said, I'd be on the least observant end of your math class spectrum Realeez :) If or no other reason than I dont know half the minhagim mentioned, that and I dont wanna LOLOL!!
