Chicken Florentine

Chicken Breast Florentine 2 servings

2 boneless chicken breasts
1 tsp. olive oil
1/2 tsp. minced onion
1/2 tsp. garlic
1/2 c. white wine
1/4 c. heavy cream
2 tbs. parmesan cheese
1/2 c. fresh spinach
4 oz. angel hair pasta

Marinade:
1/2 c. olive oil
1/2 tsp. garlic
1/2 tsp. oregano
1 tsp. rosemary

Marinate chicken 24 hours. Sauté chicken in olive oil in a hot skillet until lightly browned on both sides. Finish cooking chicken in the oven at 350F (45-50 minutes). Add onion, garlic, wine, cream, cheese, and spinach to skillet. Simmer until spinach is limp. Serve over chicken and pasta.
