Dinner tonight was Tilapia baked in a honey lemon glaze, served over long grain white rice with a side of Italian style green beans.
The glaze is different every time I make it. Tonight it had garlic, pepper, and just a pinch of onion powder.

The glaze is pretty simple. I pour honey into a bowel, mix in small amounts of lemon juice until I get the right consistency then start stirring in whatever spices seem appropriate that night. I spooned it over the fish and covered the dish with tinfoil to cook at 350F for about 25 minutes. It's best for smaller amounts of fish. I cooked 7 pieces which produced a lot of extra juice so it ended up more of a baste than a glaze. With just 2 or three pieces the honey mixture thickens in the bottom of the dish and I use a spatula to scoop it up and drizzle it over the fish. The foil keeps the fish from drying up around the edges. Delicious.

I think what he means is that honey is used to lightly glaze meats instead of 'pour'.

It is. If you want to be extremely technical then you should have a nice old fashioned sausage for lunch and then later sit down to a meal of chitlins and collards. And before you ask, chitlins ARE the bowels, not just cooked in them.

Man, I wasn't dumb enough to eat something called "chitlins" even before I knew what they were. Just the name alone- it doesn't sound like a food, it sounds like an invading alien species.

They're the bowels of an alien insectoid species. I don't eat pigs feet or chicken gizzards even though they're in every grocer. It's poor people food and skinless, boneless chicken breast is still under $2/lbs so I'm not poor enough to eat chitlins yet.

We did Mongolian beef on noodles, proscuitto wrapped dates stuffed with havarti, and mashed potatoes this evening. The potatoes were going to be double baked, but the yellow potatoes we bought have the thinest skins imaginable.

The beef recipe I actually got from Pinterest, of all places.

We went to Culver's, because it's tech week for Morgan and I needed to get home to make a phone call, so cooking wasn't much of an option.

Elmira told me I had to take her out to a Mexican place she had a Groupon for. I didn't realize until we got there that it was close to Andrul's house. I was about to call and see if he wanted to join us... then I saw the place. It wasn't a restraunt but Mexican food setup EXACTLY like Subway. I'm glad I didn't inflict that place upon him. It was a super friendly, family run place but everything else was superior at any number of local Mexican joints including the price. It was sad.

If you toss the flavor packet away and just mix the noodles with some corn, broccoli and carrots, you won't get that 1000% DV injection of sodium. It changes it up a bit and adds a bit of value to it.

@Auduma: Try draining most of the water off then adding the flavor packet. It's salty but yummylicious. The picante lime shrimp surprised me. I was given a few packets by a co-worker diagnosed with high blood pressure and it was quite good. Also, if you ever have left over spaghetti (not the meat sauce) try frying it up with garlic and butter or margarine.

@LGM: It wasn't El Taco Azteca was it? We ate there for the first time this weekend for Jeannie's birthday and both Barb and didn't care for it. The service was good but couldn't compensate for the mediocre (at best) food and high prices. A burrito at Willy's would have been money better spent.
