sounds darn scrumptious. hey you ever tried Jennie-O turkey sausage? Not the small breakfast sausage, but the one which you usually see in the 5-pk? ...if so... How would you contrast their taste VS the taste of the delightful recipe you posted?? Peace |

This recipe is basic and everyone adds their own touch to it. My sister in law makes it with cumin and paprika, I do not. I just use sea salt, but I bake it with dried tomatoes and fresh basil. It's whatever you enjoy! :-) Socca (Chickpea Flatbread) 1 cup chickpea flour (can buy at Asian or International stores) 1 medium lemon, juiced 1 1/4 cups water 3 tablespoons olive oil, plus additional for greasing the pan 1/2 teaspoon unrefined sea salt Dump the chickpea flour into a bowl. Stir in the lemon juice and water. Cover the bowl, and allow it to sit at room temperature at least 12 hrs or up to 24 hours. Set a 10-inch cast iron skillet in the oven, and heat the broiler. Whisk in olive oil and salt into the batter, until it forms a thin, smooth batter. When the skillet is nice and hot, put a gloop of olive oil in the bottom of the skillet until it's completely coated, then pour in half the batter, swirling it if necessary so that it coats the bottom of the skillet. Broil the socca until its edges turn crisp- about 7 minutes. Gently remove the socca from the pan, continue with the remaining half of the batter. Cut into squares and serve with more olive oil, fresh herbs, tomatoes, anchovies, olives or whatever you happen to like. Here, I cut into pieces & broil with a bit of goat cheese, sun dried tomatoes & basil on them. |

I have not tried the Jennie sausage, but I'm willing to try. :-) I love this recipe because it doesn't have any MSG or preservatives in it. And there is no added sugar in it, which is good for family fighting against diabetes. Once I bought the seasonings, per serving the sausage is cost affective, too! Finally, though, it does taste very good! :-) I'm going to try this sausage in a lasagna recipe I found; using thinly sliced zucchini instead of pasta! I hope it turns out! |

I love light & flaky homemade Biscuits! INGREDIENTS 2 cups all-purpose flour, plus more for dusting 2 tablespoons baking powder 1 scant tablespoon sugar 1 teaspoon salt 5 tablespoons cold, unsalted butter 1 cup whole milk PREPARATION Preheat oven to 425. Sift flour, baking powder, sugar and salt into a large mixing bowl. Transfer to a food processor. Cut butter into pats and add to flour, then pulse 5 or 6 times until the mixture resembles rough crumbs. (Alternatively, cut butter into flour in the mixing bowl using a fork or a pastry cutter.) Return dough to bowl, add milk and stir with a fork until it forms a rough ball. Turn the dough out onto a well-floured surface and pat it down into a rough rectangle, about an inch thick. Fold it over and gently pat it down again. Repeat. Cover the dough loosely with a kitchen towel and allow it to rest for 30 minutes. Gently pat out the dough some more, so that the rectangle is roughly 10 inches by 6 inches. Cut dough into biscuits using a floured glass or biscuit cutter. Do not twist cutter when cutting; this crimps the edges of the biscuit and impedes its rise. Place biscuits on a cookie sheet and bake until golden brown, approximately 10 to 15 minutes. I'm not a fan of Cauliflower but I realize it's good for me so maybe I'll try this recipe: Breakfast Cauliflower Casserole Serves 10 Ingredients 1 large head cauliflower, stalk and stems removed, cut into florets 10 large eggs, lightly beaten 1 cup milk 3/4 cup sharp cheddar cheese, grated 3/4 cup swiss cheese, grated 1/2 teaspoon garlic powder kosher salt and freshly ground pepper, to taste fresh dill, chopped, garnish Directions Preheat oven to 350º and lightly grease a 9x13 baking dish with butter or non-stick spray. Place cauliflower florets in a large saucepan 1-2-inches full of water and cover. Steam over medium heat until tender. 8-10 minutes. Drain cauliflower and transfer to baking dish. Whisk eggs and milk together in a large bowl and add cheeses, reserving 1/3 cup to sprinkle over the top, garlic powder, salt and pepper. Pour egg mixture over the cauliflower and top with remaining cheese. Place in oven and bake for 40 minutes, or until cheese is melted and bubbly and top is golden brown. Remove from oven, garnish with fresh dill and serve immediately. |

This sounds great! I'm going to try it for the 4th of July Grill/Cook Off Contest LONDON BROIL 1 London broil, top round or flank steak, approximately 2 1/2 pounds, about 1-inch thick FOR THE DRY RUB: ½ cup paprika, or 1/3 cup smoked paprika ¼ cup kosher salt ¼ cup freshly ground black pepper ¼ cup brown sugar ¼ cup chile powder 3 tablespoons ground cumin 2 tablespoons ground coriander 1 tablespoon cayenne pepper, or to taste PREPARATION Make the dry rub. Combine all ingredients except the meat in a bowl and mix well with a fork to break up the sugar and combine the spices. (Mixture will keep in an airtight container, out of the light, for a few months.) Build a fire in your grill, leaving about 1/3 of grill free of coals, or set a gas grill to high, leaving one of the burners unlit. Apply the dry rub to the exterior of the London broil, massaging it into the meat. When coals are covered with gray ash and fire is still quite high (you can hold your hand 5 inches above coals for only a couple of seconds), place the London broil on the cool side of the grill. Cover the grill and let cook for 8 to 10 minutes. Uncover the grill, turn the meat over and repeat on the other side for 8 to 10 minutes more, for medium-rare meat. Let the meat sit on a cutting board for 5 minutes or so before slicing. |

Bone Broth INGREDIENTS: Beef bones with marrow (Get from a butcher) water to cover bones 3 tbsp apple cider vinegar 2 Bay Leaves Sea Salt and Ground Black Pepper vegetables of choice DIRECTIONS: Place all ingredients in crockpot. Add in water until bones are covered. Turn setting to high and let simmer for 48 hours |

Grilled Chicken Marinade 1 cup lemon juice 1/2 cup olive oil 12 cloves garlic; minced 1/2 tsp sea salt 1/4 cup fresh oregano, chopped 1 tsp fresh ground black pepper Place your chicken in a shallow dish & cover with marinade. Keep refrigerated at least 4 but up to 24 hours before grilling. Discard marinade, grill & enjoy! |

Strawberry Crumble Ingredients 4 cups quartered strawberries 1/4 cup light brown sugar, divided 1/4 cup regular oats 3 tablespoons all-purpose flour 3 tablespoons butter, melted 2 tablespoons chopped almonds, toasted Directions 1. Preheat oven to 350 2. Coat your pan with cooking spray. Toss strawberries with 1 tablespoon sugar; place the berries into your dish. 3. Combine remaining sugar with other ingredients; stir until crumbly. Sprinkle oat mixture over strawberries. Bake at 350 for 20 minutes. |
