Egg Salad<br /><br />6 boiled eggs chopped <br />2 cups fresh spinach chopped<br />2 green onions chopped<br />1/4 cup mayonnaise <br />1/4 cup plain Greek yogurt<br />Salt & pepper to taste<br /><br />Mix it all together and let it sit in the refrigerator for a couple of hours. <br /><br />Serve on toast or crackers. <br /><br />
I like egg salad. It also seems relatively low in calories. How many do you think this serves?

Possibly 4 sandwiches depending on how much you stuff them. I made a sub sandwich with this recipe; adding sliced tomato & provolone cheese. It was very good!! :-)

A young lady at the Center made these and shared with some of us staff. My tongue loved the flavor but the heartburn wasn't worth it. It was still a neat change in an afternoon snack!


Mozzarella Cheese Sticks; string cheese
Package of Flamin Hot Cheetos or Jalepeno Cheetos
1/4 cup cornmeal
1 egg
Canola Oil

Crush the Cheetos into a fine powder; mix cornmeal & equal amount of Cheetos together in a shallow dish
Beat the egg well in a separate bowl
Heat oil in a non stick skillet until water sizzles when drop in it

Dip cheese into egg then roll into Cheetos powder until well coated, place in hot skillet and fry until crispy; turning them over to fry all sides.

Place on a paper towel to drain.

Eat warm!

I read today that the FDA is making companies phase out Trans Fats in processed foods. They have 3 years to comply.

This is great news!

Now if they will phase out sugar & salt? Wouldn't that be a healthy move?

Mex'can store has Avocados @ 10 for $1.00

...so...


I grabbed 6 cans of chunk light tuna in water (low in mercury/hi in Omega 3's) then diced sweet onions celery and cilantro...and added the Avocados instead of Mayo/Miracle Whip like the old days.

Sounds great! I've seen recipes using them in deviled eggs, as well. Have you tried that?

BBQ Rub Ideas

Salt / Sugar ratios: use higher salt rubs for beef, fish or wild game. Use a higher sugar rub on pork.

White sugar will scortch at high temps so use brown sugar combined with molasses for color & flavor in your sauces. Don't be afraid to use fruit in your sauces; especially with pork or chicken.

Add some type of pepper to your sauce; cayenne, black, white, or chili pepper depending on your tastes

Transition spices are more mild; chili powder, cumin, paprika etc..

Flavorings: Coriander, dull, ginger, onion, oregano, mustard, rosemary or Thyme
