I love these. Marinated Mushrooms 1 pound fresh cremini mushrooms 1/4 cup finely chopped red onion 2 tablespoons extra-virgin olive oil 2 tablespoons white wine vinegar 2 teaspoons finely chopped fresh oregano 2 tablespoons finely chopped fresh Italian parsley 1 clove garlic, finely chopped 1/2 teaspoon whole black peppercorns 1/2 teaspoon coriander seeds 1/4 teaspoon fine sea salt Clean mushrooms and remove stems. Simmer mushroom caps in salted water 5 minutes or until mushrooms are tender. Drain and transfer to a bowl. Add the red onion, oil, vinegar, oregano, parsley, garlic, peppercorns, coriander and salt. Stir to combine. Taste and adjust seasoning. Marinate in the refrigerator for several hours. |

Hey Plus 1. It's been a while since I've been in your thread Glad you enjoyed the curry goat. It's one of my favorite dishes. I make it one or 2 times a year. For the most part though I just buy the dish at one of the local restaurants. Plantains are good too. They were our snacks as kids in JA much chips are with kids and adults here. The other popular dishes are oxtail, jerk chicken and jerk pork, fried and stewed fish, and stew peas & rice. Then there are Jamaican beef patties, and the nectar of the gods, DG kola champagne. The fake Goya brand aint as good. |

Egg Salad 6 boiled eggs chopped 2 cups fresh spinach chopped 2 green onions chopped 1/4 cup mayonnaise 1/4 cup plain Greek yogurt Salt & pepper to taste Mix it all together and let it sit in the refrigerator for a couple of hours. Serve on toast or crackers. |
