Somehow, I lost the ability to make a meat loaf that won't fall apart.
Putting too much mush in it.

Too much eggs, too much breadcrumbs, too much milk, etc.

Cut down on the mush.

Don't put no more than two eggs in it, no more than 2 slices of crumbled bread or 1 crumbled English muffin.

Cut down on the mush.
What else? I've never made a meatloaf.
Here's my meatloaf recipe:

2 lbs ground beef

1 egg, beaten

1 English muffin crumbled in the food processor

1 4 oz can of tomato sauce

chopped: onion, green pepper, celery

1/2 cup of canned milk, undiluted

about one heaping tbsp of Lawrys Seasoned Salt

about one heaping tsp of Mccormick Black Pepper


Mix all that up real good in a big bowl with your hands. And then shape it into a loaf in a baking pan. Then spread some Heinz ketchup over the top and edges, and let it bake at at least 350, but well preheated, for an hour and 15 min.

It'll have a pleasantly tangy taste.
Oh this sounds great!

My sister bakes her meatloaf in a bundt pan and puts mashed potatoes in the center hole area, then serves it together with a slice of meat.

What else makes a good side dish with meatloaf? We don't eat many potatoes in our house.
Sometimes I make some red beans and rice on the side, and a tossed salad.

It's awesome!

And you can bother to make red beans and rice from scratch if you want, with rinsed canned kidney beans, chicken flavor, and coconut milk instead of water for the rice, or just grab a couple of boxes of the Goya brand Red beans and Rice. It tastes just like homemade. It's delicious.

I can't cook rice correctly it never turns out. It's either crunchy and breaks your teeth or it's a pile of wet mushy yuckness. I hope learning to cook rice is covered in the class!

But yes! I can buy a box of red beans & rice. Hmmm, tomorrow nights dinner menu is set! Cissly, thank you.

Now make sure you get the Goya brand red beans and rice. It's the only most perfect one I know of.

You can't go wrong with the instructions. Then toss you up a salad and have it with your favorite salad dressing.

Yes.

Just cabbage, potatoes, maybe carrots, onions, salt pepper and corned beef.

No noodles. blech.


And get you some cornbread. Delicious.
Oh yes! I should learn to make cornbread. My Gram put creamed corn in hers.
That does sound good. I've never had corned beef, but I love cabbage.

I have to follow a recipe though, so I don't mess it up.
The first time I ate corned beef was in the class. It was salty, and had a "smell" I can't explain or describe. I'm sure it's from the pickled marinade the meat came in. I'm not fond of it, at all.

If the flavor was diluted in a stew, I'm sure I'd enjoy it far better. So I'm excited to try it!

I love cabbage, too! I do fry my husband some cabbage once in a while.

I always fry my cabbage also.

I didn't realize that the corned beef took hours to prepare. :(

I just freehand stuff sometimes.
Anything I ever free handed ended up in the garbage can! Even the dog won't eat it. I'm the type who needs specific instructions step by step.

I'm going to try and make that stew. I believe it will dilute that "smell" out of the corned beef. And I'm daydreaming about me some cornbread.
