I'm trying to imagine what I'd serve this dish with. It sounds great! Maybe serve it with whole wheat pasta or with grilled chicken? Next summer I want the center to plant a vegetable garden and we will have tomatoes to eat and share! |

My sister made guacamole and she put a can of drained diced tomatoes with chilies in it. It was really good! |

:-) Well, I do live on a budgeted income! This week I bought zucchini at the farmers market, huge ones! Any ideas on how to prepare or cook them that is economical & healthy? |

My sisters and me met up at my mom's house for an evening of "girl time." We ate greens, black eyed peas, and my mom's delicious homemade cornbread! Here is how she makes it : 9 " well seasoned cast iron skillet 1/4 cup vegetable oil or shortening 2 cups cornmeal 2 TBSP flour 2 tsp baking powder 1 tsp baking soda 1 tsp salt 2 cups buttermilk 1 egg, beaten Preheat oven to 450 Melt shortening into skillet, brushing up onto sides Sift dry ingredients together into mixing bowl Pour milk into beaten egg, mix together Mix milk / egg into dry ingredients bowl, pour melted shortening from skillet into bowl too, mix together quickly Pour batter into hot skillet Bake for 20-25 mins, let cool in skillet a bit then turn onto a serving plate, cut into wedges and serve with butter & honey My mom used to pour milk over leftover cornbread and we'd eat it for breakfast the next morning. Last night, there were no left overs! Enjoy! |

Did I post this recipe already? :-) I don't recollect if I did yet. Beer Bread 3 cups self rising flour 1 cup sugar 1 tsp baking powder 1 reg size can of beer, any flavor 2 eggs 1 TBSP butter Preheat oven to 350 Mix everything together pour into a greased loaf pan. Bake 40 minutes and brush top with butter after baking. |

Here is a "cheat" recipe, when you don't have time to make it from scratch! "Cheat" Clam Chowder 1 can Campbell's potato soup 1 small can of clam & liquid 1/2 soup can of milk Heat it all slowly on the stove top. Shhhhh, maybe the guests won't know it's from a can? :-) |

Homemade Cheese Sauce 1 1/4 cups milk, heated 2 TBSP butter 2 TBSP flour Salt & pepper to taste 1/2 cups grated sharp cheddar cheese Melt butter in a skillet, add flour and cook it on low for about 2 minutes, don't over cook it though. Pour in the warmed milk and whisk it all together until smooth, let it thicken & bring to a boil. Salt & pepper if you like. Add cheese, mix well & cook 2-3 minutes letting it melt into the sauce. Remove from heat and cover with wax or plastic wrap to prevent a "film" from developing on top. Use this cheese sauce wherever you want to use a can of cheese soup! It's healthier than canned soup and less expensive to make. I make it to pour over steamed broccoli and everyone seems to like it. Enjoy! |

ooooohweeee, you are the lucky one for sho'... If you'll bake any birds (chicken, turkey, duck, etc.) soon, then consider... -pickling cucumber (slice it the same way you slice your zucchini) -clove of garlic (shred it via cheese grater) -sweet onion (diced up) -roasted garlic/bell pepper seasoning -Celtic Sea Salt -half can of chicken broth (lo-sodium) {{pickling cuc is the only item > $1.50 ....@ $3.75 for 2 lg. ones}} Bake bird, keep broth....strain broth...Add it to the half can of broth then add the garlic also. Place veggies in a plastic bag/season/shake well, then place in a baking pan. Pour garlic-chicken broth generously over veggies, cover, throw in oven. |
