Today for dinner I'm making a tossed salad and baked pork steaks.

I'm putting the shoulder pork steaks in a roasting pan and I'll cover it with chopped onion, fresh garlic, bell peppers, and tomatoes, cover it and bake until it's done.

Baked potato.

Chopped salad and I'm adding fresh fennel to the greens and other vegetables. I've never tried fennel before but a friend suggested it to me. She said it has a tangy flavor to it.

Homemade Italian dressing.

And for dessert we are having fresh peaches with honey & cinnamon drizzled over them.

Dinner at my house, is set!
Sounds scrumptious ...might steal that toss sal idea too...lol...

Friday I scoopd 5 lbs of these chumpies

http://healthyeating.sfgate.com/nutritional-saba-mackerel-1371.html

Only $3.29/lb.

...I'm amped!...

...lol...plus spent another $7 on (squash green onion orange pepper white onion cucumber garlic clove celery carrots for) 2 meals... Got home/cleaned/gutted fish but left them whole...

...Now, in about 3 hrs ...

I'm pulling out large casserole dish lined high with foil, season fish with Celtic Sea & Pepper, put fish on bottom of dish, pour in half-cup of coconut oil, sprinkle diced garlic cloves over, then drop entire load of veggies (diced) I listed, on top...close yon foil down, over the top, throw on grill for 2+ hours

Oh I love fish! This sounds marvelous. I would certainly enjoy this dinner! :-)

The fennel was good. It had a hint of licorice flavor to it. Well, not strong, subtle. And it has a nice crunch to it. So if you want added flavor for a different type of salad, I'd recommend it.

My pork shoulder steaks were on sale, $2.50 / lb, so I was happy about that. A package of four huge steaks was less than $10.

I appreciate when you post cost analysis with your cooking topics! It helps me a lot. :-)

Do you ever cook or eat, quinoa?

naww, I haven't. but I once heard it's UBER-healthy, from a dietitian I live 2 doors over from. I think I remember viewing it as a cereal-milk type dish then, I hadn't thought about it for salads tho...interesting

Hit up Kroger's this morning for some milk...walked past raw meat section, and they had Tyson's whole (young) chickens on sale. Reg. $1.99/lb on sale for $0.69/lb by which whole birds costing reg. $11.75 - $13 ...now costing $4.10 - $4.80

Man. Listen.

I scooped up 6 of them...then I headed over to produce grabbed 4 Large yellow potatoes ($3.70) 1 large onion ($0.72) and 1 bunch of carrots ($1.59) real quick...Got home...cleaned/diced all veggies up, cleaned and de-gizzard then seasoned one (1) bird, put veggies in large bag and seasoned them generously with chopped garlic & few dashes of garlic salt then shake bag vigorously ...

and place veggies in pan with 4 tblsp of coconut oil, sit bird on top of veggies/put pan in my rotisserie grill for 2.5 hours, and...

'Twas all good

Oh my! Now this is what I appreciate and like. When I find items on sale I too, buy several and try to create a good meal like this. :-)

I'm certain it tasted, wonderfully delicious! Lean proteins and fresh vegetables!

This morning I rose early to make a batch of homemade croissants. They turned out perfect and my sisters were over for breakfast.

I boiled each an egg, I served fresh apples and grapes, freshly squeezed orange juice, cubed sharp cheddar cheese, hot tea, and a freshly baked homemade croissant! The croissant was tender and flaky and buttery. There was no need to add butter to it. It melted, in our mouths.

:-) They are easy to make, once I got the yeast to work! I won't torture you by telling you how delicious and flaky they were!

Today, we did something so simple, but it was brilliant and delicious.

Cut up a watermelon, freeze it, then put it in the blender and purée it. Pour it in a glass and enjoy on a hot summer day.

Spice it up with frozen blueberries, pineapple or other frozen fruits.

An Interesting fact about watermelon for the men: There is a compound in the fruit that acts the same way as Viagra. I was surprised to hear that! :-)
