I enjoyed a very simple but delightful dish at lunch today. My hostess graciously told me to make it like this - Two cucumbers, sliced thinly Sweet Onion, sliced thinly 1/4 cup vinegar 1 & 1/2 cups water Salt to taste Dill weed to taste Sugar, to taste Add everything together, put in a spill proof container and let chill overnight before eating. This is delicious on a hot summer day! |

Today is the first time I've ever ate it and it was chilled already. I would try it unchilled! Why not? To be frank, it's likened to a homemade pickle, just not as tart. I enjoyed it very much! If you try it, let me know what you think? :-) |

When I was a kid, we put spring onions and radishes in a glass of water and kept it in the refrigerator. The cucumber salad made me think of that. |

Here is a nice homemade Italian Dressing for Salad greens, or pasta, or to dip homemade bread sticks in. I got this recipe from a dear old man, my friend from Italy. :-) ⅓ cup olive oil or grape seed oil 3½ tablespoons vinegar (suggestions: salad, red wine, or balsamic) 2 tablespoons grated Romano cheese 1 teaspoon granulated sugar 1 teaspoon freshly ground black pepper 3/4 teaspoon Italian seasoning ¼ teaspoon garlic salt DIRECTIONS: 1. Add all of the ingredients to a salad shaker, mason jar or other container. Close with a tight-fitting lid and shake for about 10 seconds to combine. Drizzle over salad and serve! Leftover dressing can be stored in the refrigerator for up to 2 weeks. |

Easy Cold Cucumber Soup 2 Large cucumbers peeled & diced 1 & 1/3 cups sour cream 1 & 1/3 cups plain yogurt 2 cups vegetable broth 1 clove garlic minced 1/2 cup chop fresh mint 1/2 cup chop fresh dill Combine everything but mint & dill, blend until smooth in a high power blender. May need to do it in batches. Add mint & dill. Put in airtight container and chill at least one hour. Enjoy! |

Today for dinner I'm making a tossed salad and baked pork steaks. I'm putting the shoulder pork steaks in a roasting pan and I'll cover it with chopped onion, fresh garlic, bell peppers, and tomatoes, cover it and bake until it's done. Baked potato. Chopped salad and I'm adding fresh fennel to the greens and other vegetables. I've never tried fennel before but a friend suggested it to me. She said it has a tangy flavor to it. Homemade Italian dressing. And for dessert we are having fresh peaches with honey & cinnamon drizzled over them. Dinner at my house, is set! |
