I am currently enjoying white rice, peas & carrots, and honey glazed baked chicken. I wanted to do something safe for Mother Santiago. She is still not ready for proteins. She better hurry up before the chicken is gone. |

Interesting - Is the Last Bite the Best? http://abcnewsradioonline.com/health-news/is-the-last-bite-the-best.html (STANFORD, Calif.) -- There’s nothing like a good chocolate chip cookie and even conjuring up memories of your most recent one might make your mouth water. However, did you know that a certain bite you took might determine when you’ll eat chocolate chip cookies again? A study out of the Stanford University Graduate School of Business says that the last bites of a certain food seem to influence people more often than the first. By having 134 undergraduate students rate crackers they were given to eat, lead author Emily Garbinsky says that how the last few bites taste, whether good or bad, drives one’s decision about when to eat the food again. Perhaps even more significant, is that given larger portions of food, diners tend to enjoy the last few bites less, making them more apt to delay eating the same food again. |

This week I made cold soups. My favorite recipe was the Gazpacho. Gazpacho 3 pounds tomatoes, cored and coarsely chopped 1 seedless cucumber, peeled and coarsely chopped 2 red bell peppers, coarsely chopped 1 jalapeño, seeded and coarsely chopped 1/4 cup sherry vinegar 1/3 cup extra-virgin olive oil Salt and freshly ground pepper Combine all of the ingredients in a large bowl and refrigerate overnight. In a blender, puree the vegetables until smooth. Strain the soup into a deep bowl, season with salt and pepper, and serve. Enjoy! |

I also enjoyed a cold cucumber soup but I misplaced the recipe. When I find it I'll post it, too. Next week, we are making salads. |
