I seldom drink coffee. It's a cup of hot tea for me. :-) I did enjoy the ice cream in the coffee, it was very nice. I doubt I'd buy a bottle of the cream though, I'd never drink it all before the experation date and I'd hate to waste it. I might try it at the center, if I can convince the kitchen clerk to buy a bottle! |

When I was a child a lady in our church made homemade Mac n cheese. I would eat it all if I could. The boxed version is not good at all comparetively speaking. Continuing with BBQ picnic recipes I present: Homemade Mac n Cheese 1 pkg (8 oz) noodles of your choice; traditionally elbow but try others too! 1/4 cup butter, cubed if in stick form 1/4 cup regular flour Salt & pepper to taste 2 cups milk (any fat % will work, but the more fat the creamier it will be) 2 cups shredded cheese (experiment & use different types for your "own". The more fatty the cheese, the creamier it will be. I use sharp cheddar in mine.) Paprika, optional Cook elbow macaroni according to pkg. Melt butter in a large saucepan on medium heat. Stir in flour, salt & pepper and cook until smooth, stirring constantly. Slowly whisk in milk, bring to a low boil, stirring constantly for 1-2 minutes to thicken it a little. Stir in cheese until it's melted completely. Add macaroni to the cheese sauce, stir until well coated. May sprinkle with paprika if desired. Enjoy! My, I'm going to need to swim extra laps now I know how to make this dish! Lawdy, help me! :-) |

Another picnic friendly recipe. Basalmic Three Bean Salad 2 lbs fresh green beans, trimmed & cut up in bite pieces 1/2 cup Basalmic vinegar 1/4 cup sugar 1 garlic clove, minced Salt & pepper to taste 2 cans red & 2 cans white kidney beans, rinsed & drained 4 fresh basil leaves, torn Cook fresh green beans uncovered until crisp tender, about 3-6 minutes Drain and run under cold water then pay dry In bowl, whisk vinegar, sugar, salt & pepper until sugar dissolves. Add all beans, toss to coat. Refrigerate at least 4 hours. Before serving, stir in fresh basil. Enjoy! |

Fake French Toast 1/2 cup milk 1/2 cup cream 4 tbsp honey (or agave) 1 tbsp vanilla extract (less if you prefer, but at least 1 tsp) 2 tsp cinnamon, separated 1/8 tsp nutmeg 1 egg white (or one whole egg) 1 pkg croissants (wheat if available) 2 tsp butter, separated Preheat oven to 175F (convection if available) Slice croissants in half lengthwise (to open like a book) Warm honey in microwave, add vanilla and mix. Whisk together milk, cream, vanilla-honey, 1 tsp cinnamon, and nutmeg. Taste, make adjustments if necessary. Brush mixture inside of each croissant and set croissants aside. Add egg white and remaining cinnamon to mixture and mix well. Melt 1 tsp butter in skillet. Dip each croissant in mixture then place in warm skillet until slightly browned on bottom, flipping once. Place croissants on baking sheet lined with foil and place in oven. (Croissants MUST be slightly browned on bottom otherwise they will stick due to moisture.) Melt remaining butter and brush onto tops of croissants. Remove from oven when slightly glazed, probably less than 5 minutes depending on oven. Serve with whipped cream, eggs or other fixings and enjoy! Plus 1, I think I put everything down... I've never written down this recipe. Hope you like it.
