Today, I learned to make a dressing that can be used in cole slaw, pasta salad, or potato salad. One dressing, three salads.
Post that and Plus 1, you'll be my favorite AFN cook. :P

Now in class we're making Memorial Weekend Bar B Q recipes. I'll post them soon. Today, I learned to make a dressing that can be used in cole slaw, pasta salad, or potato salad. One dressing, three salads.
Dressing Recipe

1/2 C Mayonnaise
1/2 C Sour Cream, or plain yogurt
1/4 C Vinegar
1/3 C Sugar
1/4 TBSP black pepper & celery seed
Salt to taste

Whisk everything together until smooth. Mix in shredded cabbage & carrots for cole slaw, diced boiled potatoes, eggs, pickes, dash of mustard, and onion for potato salad, or cooked pasta for pasta salad.
Here it is, Truthie! I'm not so fond of the dressing for potato salad. I like more of a mustard sauce for mine.

Today we have a picnic celebration for the graduates at the center and I'm making Moon Pie's Hummus & the above potato salad. I'm nervous to see how they are recieced by the families.

It's perfect timing. I'm making cole slaw and had picked up a packaged mix from the store. I'd much rather try this. :D

:-) I do hope it worked well for you.

One thing I noticed, the slaw is "dry" at first but over time it "juices out" and has more of a slaw consistency.

Recently I enjoyed a very nice lunch of Bolognese. I'm searching the internet for a recipe and I've decided, it's really a meat & tomato sauce not unlike spaghetti sauce.

I'm asking my cooking instructor, what exactly is the difference.

More picnic bar b q recipes to come. Today it's a classic, Baked Beans in a crock pot:

6 strips of bacon, cut into small pieces (optional)
1/2 onion, diced
3 cans regular pork n beans (or canned pinto beans for vegetarian)
1 1/4 cups brown sugar
1 1/2 tsp dry mustard
1 1/2 cups ketchup

Fry bacon with onions until they are partially cooked. Mix together brown sugar and mustard until combined. Pour beans in crock pot, dump in brown sugar mixed with mustard, stir it in well. Mix in the bacon & onions, stir well. Top beans with ketchup & cook on high 5 hours. After they cook uncover and cook on high an additional 30-45 minutes to thicken the beans. Serves about 8-10 people.

Vanilla ice cream was the best! I tried both that & chocolate. I might try a caramel flavored one next. :-)

The Best Part of Waking Up?

Cafe Mocha

1 cup strong brewed coffee
1 Tablespoon unsweetened cocoa powder
1 Tablespoon plain white sugar
2 Tablespoons milk

Mix well and enjoy! My sister put some whip cream on top of mine this morning, and chocolate shavings. Hmmm hmmm good. :-)

I'd have the shakes if I drank that much caffeine.

I love my coffee though.
